About this Course

Fermented foods are among the most nutritious, shelf-stable, and delicious things you can make at home. This hands-on workshop teaches you to preserve the harvest using time-honoured fermentation techniques.

What we cover:
• The science of lacto-fermentation and wild yeasts
• Making sauerkraut, kimchi, and other vegetable ferments
• Kombucha and water kefir brewing
• Sourdough starter and bread baking overview
• Fermented hot sauces and condiments
• Vinegar making from fruit and wine
• Food safety: understanding pH, salt ratios, and spoilage
• Equipment, vessels, and storage solutions

A tasting table of 10+ fermented foods will be available throughout the day. Participants go home with their own crock of sauerkraut in the making.
